Back to the seventies: Bean salad
You need to start this at least three-four hours before you want to eat it. But if you use canned. pre-cooked beans it only takes about five minutes to put together, and then you can forget about it.
First make the dressing by mixing together the following:
1 tbs sugar
1 tsp salt
1/4 cup olive oil
1/4 cup wine vinegar (red or white, according to taste)
1/2 tsp good dijon mustard
Whisk all together.
Now prepare the following vegetables:
One medium-sized onion, sliced into rings
Two cups of mixed beans
One cup of kidney beans
1 green pepper, or 1/2 a green and 1/2 a yellow pepper, cut into strips
Put all those things in a bowl, then add the dressing. Mix thoroughly and leave for several hours, stirring occasionally if you think of it.
