Gado Gado (vegetarian dish)

for 2 people

1 medium potato, cubed

2 eggs

some young green beans, topped and tailed

about 3-4 cauliflower or broccolli florets, choppped

two tomatoes, cubed

1 small cucumber, peeled and sliced

1 small onion, sliced

Lettuce leaves, torn up

Sauce:

1/3 cup peanut butter

1tsp brown sugar

2 tbs lemon juice

squirt of soy sauce

1/4-1/2 tsp of sambal olek

Put the potatoes and the eggs into a pot and bring to the boil. If you have a steamer, put the beans and cauli or broccolli in it above the potatoes and eggs and cook the lot for about 7 minutes; otherwise put them in the pot when the potatoes are about half cooked and cook for 3-4 minutes.

While that's cooking, saute the onions in a little bit of olice oil until they are brown.

When the vegetables are cooked cool them quickly under cold running water.

While they cool mix all the sauce ingredients in a jug and heat in the microwave for one minute, then beat. Add cold water until the sauce is the consistency of thick cream. This sauce is one of those wonderful mixtures that combine sweet, sour, hot and savoury flavours.

Cover two plates with lettuce leaves and pile the cool vegetables on top of them. pour the sauce over this then garnish with sliced cucumber and tomato. Finally top with fried onion.
