This is a really yummy unbaked slice for special occasions. It has dates and dried fruit in it so you can kid yourself it is really healthy.

100gm butter
100gm brown sugar
150 gm dates chopped
50gm glace (maraschino) cherries chopped
50 gm sultanas or other dried fruit
150gm cornflakes
250-500 gm of dark chocolate melted (depending how thick you like it!)

Melt butter and brown sugar together. Add the dates and dried fruit and simmer for a few minutes until fruit softens.

Remove from heat; add cherries and cornflakes and stir to mix. Press mixture into a tin and cover with melted chocolate. Refrigerate and cut into squares to serve.
