Spicy vegetable mixture

For two people you will need

1 onion, chopped

2 garlic cloves, crushed

2 tbs olive oil

While this is cooking gently, cube the following vegetables - I think these are essential and others are optional extras.

1 med potato or (extra yummy) sweet potato

1/4 head cauliflower or 1/2 head brocolli

1 med carrot

Put these aside for a moment.

When onion is soft add

1/2 tsp cinnamon

1 tsp paprika

1/2 tsp ground ginger

1 tsp cumin (more if you like).

Stir this for a moment then add the cubed vegetables, Stir until they are coated with the spice mixture, then cover and turn the heat to low.

Stir ever five minutes or so. After ten minutes add

2 large tomatoes (or several smaller ones) chopped

Cover again and continue to cook until it is all mushed into a yummy softness (about 10 more minutes). Add

1 tsp garam masala

Serve with a large dollop of unsweetened yoghurt.
