Lizzie's grownup toffee coffee icecream
This is a really delicious icecream that isn't too sweet. Kids like it, but I think it has a really sophisticated flavour.
1/4 cup sugar
3/8 cup water
1 litre really good vanilla icecream
1tbs instant coffee
First, make the hazelnut praline. Heat the sugar and water together in a cast iron pot, add the hazelnbuts and boil until the mixture darkens. Watch and turn hazelnuts once if necessary to prevent the nuts measpoonful hardens immediately when you drop it into cold water, remove from the heat, pour into an oiled shallow pan and leave until it is cold and hard. Break the praline up into small pieces.
Take the icecream out of the freezer and leave until it has softened enough to mix. Put it into a lidded container. Add the instant coffee and the pieces of praline. Return to the freezer.
